1 red potato, cubed
1/4 yellow pepper, diced
2 tbsp. Garden Veggie Cream Cheese
1/4 salmon fillet (I used cooked leftovers)
3 tbsp red onion

Here is how you make Sweet Potato Salmon Hash:

Saute the onions in olive oil and half of butter until soft, about 3 minutes. Add sweet potatoes. Cook until they start to soften, about 5-6 minutes. Add rest of butter with potatoes. Cook 10 minutes, or until potatoes are soft. Add yellow peppers; cook 2 more minutes. Add cream cheese and salmon and toss until cream cheese melts and salmon is heated. Top with salt, pepper, and herbs of your choice (I like rosemary and thyme). Add a fried egg on top.
