2 new potatoes, "baked" for 2 minutes in micro
3 tbsp diced onion
2 tbsp diced green pepper
.5 tbsp garlic infused olive oil
.5 c steamed green beans, cut into 1" pieces
4 grape tomatoes, halved
2 tbsp water
1 tbsp worcestershire sauce
1 tsp cumin
1 tsp paprika
1 tsp chili powder
3 frozen cocktail size meatballs, thawed & quartered

Here is how you make Morning Potato Veggie Scramble (No Eggs):

Nuke new potatoes in micro for 1 minute on each side (be sure to poke a few wholes in the potatoes). While that's cooking, saute the onion & bell pepper with salt and pepper in the olive oil. Add green beans (mine were leftovers from previous night's dinner) and grape tomatoes. Dice new potatoes once cooked and add to the skillet. Add meatball pieces and stir. Add water and worcestershire and seasonings. Stir to distribute spices evenly. Serve once meatballs are cooked through (approx 5 minutes after adding). Serve warm with .5 tbsp grated parmesan over the top. Serve with wheat toast, jam, and a side of fresh fruit for a well rounded breakfast!Could just as easily be made as an egg scramble, but I didn't have any eggs in the house!Number of Servings: 2Recipe submitted by SparkPeople user HEYWOOD417.
