Mix eggs, egg whites, yogurt, half and half, low fat milk, oregano, salt and pepper. lay ham in shallow round baking dish. put sauteed vegetables on top and cover with Monterey Jack cheese. Pour egg mixture into dish. Add cheddar cheese and top with thinly sliced Roma tomato.
