Here is how you make Rachel Mac's Low-Carb Crustless Mini Quiche:

Sautee chopped onions in butter until translucent. Add mushrooms, cook. Then, add defrosted, rinsed, and dried (squeeze out the water in clumps) spinach. In a separate pan, cook bacon. Drain and set on a paper towel. Beat eggs and cream, then add cooked spinach/onion/mushroom mixture and cooked bacon. Pour into muffin tins, adding grated cheddar to each one, and stir each muffin tin to mix up all ingredients. Sprinkle parmesan on top and a little ground pepper, to taste.
