I made this quiche with things that I happened to have on hand. Some caramelized onions, red and green bell peppers, sun dried tomatoes, bacon and a lot of cheese. You can leave out the bacon for less fat and you can add more eggs if you like an eggier quiche.

CRUST:
1 cup flour
1/4 tsp salt
1/3 cup Crisco shortening
1 tbsp water
2 sheets of waxed paper

QUICHE:
8 medium eggs (slightly beaten)
1/2 cup fat free evaporated milk
1/4 cup sun dried tomatoes (julienned)
3/4 cup bell pepper strips (sauteed)
1/2 large onion (sauteed)
1/3 lb bacon (cooked and crumbled)
1 cup shredded mozzarella
1/2 cup medium cheddar cubed


How Do I Make Decadent Quiche?

Here is how you make Decadent Quiche:

Makes 8 servings in 9inch panCrust:1. Preheat oven to 475. Mix flour and salt together in a bowl.2. Cut in half of the Crisco until it looks like meal.3. Cut in the rest of the Crisco until it looks like large peas.4. Sprinkle water into mixture and stir with a fork.5. Roll dough into a ball and place on a sheet of max paper.6. Press ball flat with hands then place other sheet of waxed paper on top of dough. Roll out dough with a rolling pin until thin.7. Take off top layer of wax paper and place dough in 9 inch pie pan.8. Smooth into pan, remove wax paper and prick sides and bottom with a fork.9. Bake for 8-10 minutes until edges are lightly browned.Quiche:Turn down oven to 375 when pie crust is done.1. Cook and crumble bacon. Saute bell pepper strips. Saute onions in butter (about 1 tbsp). Grate and cube cheeses. Chop or Julienne tomatoes.2. Gently beat eggs. Stir in evaporated milk, bacon, bell peppers, onions, tomatoes and cubed cheddar.3. Sprinkle half of shredded mozzarella on baked pie crust.4. Pour in egg mixture.5. Sprinkle remaining mozzarella on top of egg mixture.6. Bake for 20-25 minutes until cooked. The center should not jiggle when moved.7.
