1 cup Quinoa grains
2 cups water or broth (adds more calories w/broth)

1 cup chopped celery
1 medium onion diced
1 cups diced cabbage
1 cup diced fresh red bell pepper
1 cup sliced scallions (white and green parts)
1 cup sliced then diced mushrooms
6 cloves garlic
red pepper flakes to taste
salt to taste


How Do I Make Quinoa Pilaf?

Here is how you make Quinoa Pilaf:

Cook quinoa according to package instructions, set aside.In a medium sautee pan, set on med high heat, add 1 Tablespoon olive oil, celery, cabbage, onions and red spices. Sautee for about three minutes. Add diced mushrooms, red pepper and garlic. Sautee another three minutes, remove from heat and stir in green onion.In a medium glass bowl toss veggies with the cooked quinoa and remaining tablespoon of olive oil, season to taste and serve or store in the refrigerator until needed.Serving Size:?Makes 8 healthy servings
