This recipe was surprisingly flavorful. I had some old wild rice to use up so decided to try this. I am glad I did. The original recipe calls for an additional 1/4 cup of brown sugar which I omitted and did not include in the nutrition calculation.

1/4 cup honey
2 tbsp molasses
3 cups cooked wild rice
2 tsp salt
6 cups bread flour
4-1/2 tsp active dry yeast (2 packets)


How Do I Make Wild Rice Bread?

Here is how you make Wild Rice Bread:

Combine yeast, 2 cups flour and other dry ingredients. Combine the liquids and heat to 120*-130*F. Combine the rice, dry mixture and liquid ingredients in mixing bowl with paddle or beaters for 4 minutes on medium speed. Gradually add the remaining flour and knead with dough hook 5-7 minutes until smooth and elastic. Place dough in a lightly oiled bowl and turn to grease the top. Cover and let rise until doubled. Punch down the dough and turn onto a lightly floured surface. Divide in half and shape each half into a loaf. Place in greased 9" x 5" loaf pans. Cover and let rise until doubled. Bake in preheated 375*F oven 30-40 minutes. Remove from pans and cool on rack. Serving Size: 1/12th of a loaf.
