This is a high protein breakfast or snack, modestly updated for lower fat (no butter or margarine), higher fiber (brown rice) and lower sugar (Splenda brown sugar blend).This recipe uses whole milk and eggs, but low fat milk would work. Here is how you make Crock Pot Brown Rice Pudding:

Makes 6 generous 1/2 cup servings. (Adding raisins is an option, 1/2 to 1 cup, but the calories are additional)Cook rice with 2 cups water in the crock pot (prespray with Pam to avoid sticking) on high for 2.5 hours or perhaps less. You can stir once or twice & test for doneness.If you want to prepare the rice ahead you can cook some for another meal, in which case set aside 3 cups cooked rice for this recipe which is what 1 c. of long grain basmati yielded. My 30 year old Rival crock pot cooks rice very well using the same porportions of rice and water as the package suggests for stove top, but no need to watch it!Scald milk and set aside to cool beforeadding 3 well-beaten egg whites and 1 egg yolk, and the sugar, vanilla and spices.Add the cooked rice to the milk mixture in a bowl or the cooled pot, wipe the crockpot clean and respray with Pam, and pour pudding mixture into crock pot.Cook on high for 1-2 hours or low for 4-6 hours. Stir once during first 30 minutes. Recipe can be doubled for 3.5 or 5 qt models.
