1 cup extra lean ham, finely diced
4 patties turkey sausage, finely diced
3 tablespoons light mayonnaise (or to taste - don't forget this will add/subtract some calories!)
3 oz. part skim reduced fat mozzarella, shredded or small cubes
Parsley Flakes, to taste (or fresh, finely chopped)
Salt and Pepper, to taste

(1) Peel the eggs.(2) Finely dice eggs, onion, peppers, mushrooms, ham, and sausage, dumping into a large bowl as you go. (I throw all of these into a food processor to chop.)(3) Stir to combine well.(4) Add mayo, parsley, pepper, salt, and cheese.
