1/8 cup Reduced Fat Sharp Cheddar Cheese Shreds
4 thin slices of fresh tomato
2 slices of bacon (fried crisp)
1 egg

Here is how you make Bacon Egg and Cheese Salad:

For the Dressing:Whisk together the dijon mustard and red wine vinegar. Slowly add in the oil and stir until emulsified. Set the dressing aside while you assemble the salad.For the salad:Pile greens on the plate. Top with shredded cheese. Lay out the four slices of tomato on top of the greens. Fry 2 pieces of bacon until extra crisp. Slice each piece of fried bacon in half. Place over the top of the salad making a 'cradle' for you egg. Fry egg in a small pan sprayed with cooking spray. For best salad results, an over medium egg is ideal (this of course depends on your preference). Salt and pepper to taste, Top salad with dressing and enjoy!
