Bring 9" Non-stick Skillet to medium-High HeatIn small bowl mix egg and eggbeaters1) Add Butter and Olive Oil, then add onions, salmon, garlic salt and pepper then saute.2) Add eggs and let cook 30 seconds. Run heat-resistant rubber spatula under eggs and lift while tilting skillet so runny eggs can flow under cooked eggs. Repeat going around the skillet until most eggs are cooked. Let cook 15 seconds the flip/turn.3) Add 1/2 Mozzarella. Fold out onto Plate and top with remaining Cheese.
