1/4 c Light Mayo
1/4 c Low Fat Sour Cream
1 tbs Honey Mustard
1 tbs Lemon Juice
Pinch of Cayenne Pepper
1 tsp Turmeric (optional for color)


How Do I Make Smoked Salmon Benedict?

Here is how you make Smoked Salmon Benedict:

- Fill a medium skillet half full of water and add a splash of vinegar. Bring to a boil, then reduce heat to simering. Break 1 egg into a small dish, then slide egg into simmering watter. Simmer eggs for 3-5 min., until set but yolk is still runny. Remove from pan with a slotted spoon and with a clean kitchen towel, pat the bottom of the spoon to absorb any excess cooking water. -Meanwhile, in a small sauce pan, whisk together the sauce ingredients. Cook medium heat just until mixture is heated through. Do not boil. Remove sauce from heat.-For each serving place 1 toasted crumpet on a plate and top with 1/4 of the smoked salmon. Place egg over salmon. Pour 2 tbs sauce over egg. Garnish with fresh dill or parsley if desired.
