Here is how you make Hollandaise Sauce:

Blend egg yolks with lemon juice, salt and cayenne pepper. Use either an immersion blender or wire whisk. Blend well. Once blended, slowly pour in melted butter. Whisk/blend well while adding butter. Blend for 30 seconds if using immersion blender or 1 minute if hand whisking. The sauce will continue to thicken as it cools. Drizzle sauce over poached eggs.
