Blueberry Sauce-Put all ingredients in saucepan and boil gently for about 10 minutes, or until blueberries begin to pop open. For a thicker consistency, use a little cornstarch to thicken.Pancakes-1. In a medium bowl, add flour, salt, and baking soda. Mix until thoroughly blended. Set aside.2. In another medium bowl, beat together the cottage cheese, yogurt, eggs, and lemon juice.3. Slowly stir the flour mixture with the wet ingredients and mix together.4. Fold in the blueberries until blended with batter.5. Heat nonstick pan over low to medium heat.5. Slowly pour the batter in large spoonfuls, about 1/4 cup. A smaller pancake will cook faster.6.
