Add onions, and peppers, saute until onions are translucent and peppers begin to soften, add garlic and cook until fragrant, add tomatoes and spinach. Cook until tomatoes begin to soften and spinach is wilted. Remove from pan and set aside.Add sausage to pan, cook stirring and breaking up, until fully browned. Drain well if using a commercial sausage. Add veggie mixture back to pan and toss to combine well. Spread mixture evenly around bottom of pan. Pour eggs in pan, covering sausage and veggies evenly. Cook on stove top for about 5 minutes or until bottom is set. Transfer pan to oven and bake until center is set and no longer jiggles.
