So take your leftover sausage peppers and onions (i make mine with no sauce and cubanelle peppers) and your leftover sub rolls and put them to use. Set the oven to 375 F, and mix your eggs and milk together in a bowl (feel free to add whatever seasoning you like).Then layer the bottom of a 13 x 9 inch pan with 3 rolls (cut them in half to cover the whole bottom), and pour half the egg mixture on top. Next, put on your sausage p&o mix (I used about 2 cups or about 5 links that were already cut up and cooked - DO NOT use raw meat it would take a lot longer to cook) and sprinkle about a cup of shredded cheese on top (I used a mexican blend since that was what i had on hand ) Tear up half a roll into pieces and scatter it on top. Pour the rest of the egg mixture on top and scatter about a quarter cup more of cheese and you're good to go. Squish down and let sit for about 15 mins.Bake for about 45 minutes or until it puffs up and is golden brown.
