Here is how you make Shake Up Your Kitchen Shakshuka:

Juice lemon into your skillet, add garlic and onions over medium heat. As they start to become translucent, add tomatoes, mushrooms, pepper and vegetable juice. Let the tomatoes start to reduce down. Crack eggs over sauce so that eggs are evenly distributed across sauce?s surface. Cover skillet and cook until yolks are just set, about 5 minutes. Using a spoon, baste the whites of the eggs with tomato mixture, being careful not to disturb the yolk. Serve with a sprinkle of feta or parmesan cheese and with whole grain toast if you like.
