This recipe does not require any seasoning, since the Chorizo, pepper, and parmesan will do the trick. But you are welcomed to add a pich of salt and pepper to the eggs.- For the Omelette filling, in a 10'' non-stick Omelette pan use 1 tbsp of the oil to fry the Jalapenos, chorizo, tomato, and green pepper. 1 minute.- Remove the filling and put the additional oil in the pan.- Pour in the Egg mixture, and Fry until the top is close to setting.- Add all the filling in the middle of 1/2 of the omelette, then sprinkle with the parmesan cheese.- Using a spatula, carefully fold the other half of the omelette to cover the filling.- Turn the Omelette over to fry the other side.
