Preheat oven to 375.Cook bacon. Reserve 1 tbsp bacon fat and spread all around pan and up sides. If you use the bacon fat, you only need ~ tbsp coconut oil (below).Add coconut oil. Saute onion about 5-6 mins.Add spinach and garlic. Saute 1 min.Remove from heat and spread veggies on bottom of pan.Mix 8 eggs and season with salt/pepper.
