1 cup skim milk
8 Egglands Best large eggs
2 tbsps dijon mustard
1/2 tsp pepper, freshly ground
1/2 tsp nutmeg (optional)
8 ounces Cabot 50% light cheddar cheese, shredded
1-10 oz box frozen, chopped spinach-thawed and squeezed dry

Here is how you make Spinach and Cheddar Omelet Spirals:

Preheat oven to 350 degrees. Spray a cookie sheet that has sides with non-stick spray. Line the cookie sheet with parchment paper, making sure it extends beyond all 4 sides by at least 1". Spray the parchment paper with non-stick spray and set aside.In a mixing bowl, beat milk and flour until smooth. Add eggs and beat until combined. Add dijon mustard, pepper, and if desired, nutmeg; mixing well. Pour egg mixture into prepared cookie sheet and make sure it is distributed into the corners. Sprinkle spinach evenly over the eggs.Place in the preheated oven and bake 10 minutes or until egg mixture is set. Remove from oven and sprinkle evenly with shredded cheese. Return to oven for 2 minutes or until cheese melts.Remove from oven and cool 5 minutes. Carefully lift omlelet out of pan using the parchment paper onto counter. Starting at a narow end of the omelet, gently roll up omelet. Let cool another 10 minutes to set. With a sharp slender knife, cut in half, then continue cutting in half until you have 16 spirals approx 1/2' wide each. Place flat on the parchment paper and back on the cookie sheet (they will all fit a standard cookie sheet!) Place cookie sheet in the freezer until omelets are frozen (approximately 1-2 hours),.
