Preheat oven to 375.Add olive oil to heated skillet. Saute onions and ham til onions are tender. Add well-drained spinach, sauted til spinach is warmed. Pour into square baking dish. Setting 1/4 cup aside, sprinkle 3/4 cup cheese evenly over mixture.Combine eggs, milk and seasonings in bowl, beat til well mixed. Pour egg mixture evenly into baking dish.Bake 30 minutes, then remove from oven. Let sit 5 minutes before cutting into 8 equal pieces. Serve garnished with remaining shredded cheese.
