Here is how you make Ham and Spinach scramble:

Coat your frying pan with cooking spray and saute your onions and mushrooms until the onions being to carmelize.Add salt and pepper to taste, then ham.Cook ham until it is warmed through.Add spinach and stir in pan until spinach wilts and reduces to 1/2 it's original volume.Add eggs and begin mixing them through the veggies until the are cooked to your liking. I like my eggs well set. (Hate runny parts.)
