Heat tsp olive oil in sautee pan then add diced/sliced mushoom pieces. Add in a large handful of fresh spinach leaves (about 1 cup not packed) and cook till fully wilted adding salt to taste. As spinach is wilting, beat egg in small bowl (adding a SMALL amount of water makes for fluffier eggs). Pour eggs over cooked vegetables and let set.
