Here is how you make Breakfast Spinach Omelette Pie:

In a medium nonstick saute' pan, cook all vegetables and spices, except tumeric, in 2/3 tsp. oil until almost tender. Keep spinach mixture warm. In a mixing bowl, whip egg whites, whole eggs, and tumeric together. Heat 1 tsp. oil in a second saute' pan. Pour half the egg mixture into the saute' pan and cook until egg sets and omelette forms. Repeat process to make another omelette. Place omelettes in the bottom of two soup bowls. Spoon half the spinach mixture onto each omelette to form a spinach pie.
