1. Preheat oven to 400 degrees.2. Spray deep pan (wok or large saucepan works) with olive oil or cooking spray3. On medium heat, saute onions and garlic until onions are soft. Add spinach and cook until most of the water is removed.4. Sprinkle with flour and stir until flour is combined5. Add milk slowly; blending until mixture is creamy. Cook to a simmer, stirring constantly until thickened slightly (usually 2-3 minutes.)6. Remove pan from heat and blend in rice, eggs and feta cheese.7. Pour mixture into an 8" glass casserole dish or Le Creuset coated with olive oil or cooking spray.8. Sprinkle parmesan cheese on top.9. Bake at 400 degrees for about 35-40 minutes or until set.
