Here is how you make Bacon, spinach and potato stacks:

Makes 12 servings.Preheat oven to 180C (350F)Steam potatoes till just tender. Cut into 4 pieces and set aside.Steam spinach until just wilted.Mix eggs, cottage cheese and herbs together.Cut bacon into 24 pieces (each rasher into 4 pieces).Spray a 12 cup muffin tray with oil, or brush lightly.Place a middle piece of potato on bottom of each cup. Place a piece of bacon on top. Using a regular spoon, add 1 spoonful cheese and egg mixture to each cup.Evenly distribute spinach leaves to each cup. Place a tablespoon of grated cheddar cheese on top. Spoon the rest of the egg and cheese mixture over each stack. Place another piece of bacon on top and then a potato slice. Top with the rest of the grated cheese.Bake in 180C (350F) oven for 35 minutes or until set.
