Saute the mushrooms until soft, about 5-6 minutes. Set Aside.Place the spinach in the skillet that you used for the mushrooms. Add 1/4 cup of water. Using medium heat, cook the spinach until just wilted, about 3-4 mins. Pack in the spinach with a spatula. Drain all the excess water.In a large mixing bowl, whisk the eggs until well blended. Add the cooked mushrooms, spinach, cheeses, butter and milk to the eggs. Mix well. Season to taste with salt and pepper.Divide evenly among the 12 muffin cups.
