Here is how you make Frittata with Roasted Red Peppers, Spinach and Caramelized Onions:

Preheat oven to 350F. Mix eggs and milk in a large bowl and add the caramelized onions. Stir to distribute the onions. In a 10 inch non-stick skillet, heat the oil and saute the garlic. Add pepper strips and spinach, cover till spinach is mostly wilted. Pour egg mixture over, reduce heat to medium-low. Cook on stovetop for 2-3 minutes, then sprinkle parmesan over top and put in oven for 10-15 minutes or till eggs are set but not hard. Cool for 5 minutes before serving.
