Pre-heat oven to 375. peel potato, slice into thin slices and brown in a skillet. leave in bottom of skillet and set aside. crumble and brown sausage in another skillet. pour on top of potatoes. saute onion and mushrooms. add on top of sausage. add chopped spinach on top of veggies. spread cheese on top. add cream to eggs and beat together. pour on top of layered skillet.
