1 10 oz. Package Frozen Spinach
12 cherry/grape tomatoes, chopped
1 medium onion, chopped
1 clove garlic, minced
1.5 tbs. olive oil
2 tbs. 1% milk
3 tsp. Kraft Parmesan Cheese
1/3 cup shredded or diced fresh mozzarella
salt, pepper to taste.


How Do I Make Spinach, Tomato, Onion and Mozzarella Frittata?

Here is how you make Spinach, Tomato, Onion and Mozzarella Frittata:

Preheat oven to 400 degrees. Thaw spinach in microwave and drain/squeeze out as much water as possible. In medium bowl whisk together eggs, milk and parmesan cheese, set aside. In an 12-inch oven-safe pan, sautee chopped onion in olive oil until softened. Add garlic clove, sautee for another minute or two more. Add spinach and chopped tomatoes and combine. Make sure mixture is spread evenly on the bottom of the pan. Pour egg mixture on top of spinach, onion, tomato mixture and let it cook until the edges begin to set. In the meantime, sprinkle mozzarella on top. Use a spatula to lift set edges and let uncooked egg run underneath to cook if necessary. Once edges are firmly set, place pan in preheated oven and cook for about 12 minutes. Remove when egg is no longer runny in top center or until firmly set. Be careful when removing pan from oven as the handle will be hot! Cut into 8 wedges, serve hot.
