These drop biscuits are a weekend favorite at our house. They are absolutely delicious and are very quick to prepare. A variation of the drop biscuit recipe from The Joy of Vegan Baking, these are made with melted Earth Balance margarine and some Whole Wheat Pastry Flour. My son likes to eat these cut in half with some margarine and maple syrup on top. You can also eat these plain, with jam, or as a veggie sausage breakfast sandwich.

Here is how you make Vegan Drop Biscuits (EB version):

Preheat the oven to 475F.Lightly grease a large baking/cookie sheet.In a large bowl, whisk together the flours, baking powder and salt until thoroughly combined. Stir in the milk and melted margarine until just combined and moistened; don't overmix! The dough will be very sticky and thick. Using a 1/4 cup measure, pack the dough inside then plop the dough onto the greased baking sheet. Leave about a 1.5 inches between the biscuits. Bake them for 9-15 minutes or until they are golden brown. After 10 minutes, I like to turn the heat down to 400F. NOTE: -You can make them with oil, instead of the Earth Balance to save time, but the nutritional content will change.-Adding fresh herbs or scallions (chives and rosemary are yummy), black pepper, sun-dried tomatoes, currants or jalapenos to these would be delicious.
