1 1/2 C whole wheat flour
1 C rolled oats
1 Tbsp baking powder
Pinch of salt
1/4 C unsweetened applesauce
1/2 C nonfat vanilla soy milk (almond milk works great too)
1/2 C cranberries (fresh or frozen) chopped
1 Tbsp orange zest
or
Zest of one washed orange grated
1 Tbsp (approx) oil


How Do I Make Vegan Cranberry Orange Bannock?

Here is how you make Vegan Cranberry Orange Bannock:

Preheat oven to 450 degrees F. Mix dry ingredients and orange zest in a large bowl until combined. Add applesauce and soy milk at once and mix just until combined. You should have a cookie like dough. Do not over mix. Oil a 10" cast iron skillet or round cake pan. Turn dough into oiled pan and pat dough to edges with wet hands. Before baking the bannock, cut or score the dough into 8 wedges. This makes it easier to cut apart after baking. Bake at 450 degrees for 10 - 12 minutes for cast iron skillet or 12 - 15 minutes for cake pan or until browned lightly.
