Cherry Tomatoes (20 to 30 whole)
Bell Peppers (Red,Green,Orange and Yellow) 2 cups diced of each or 184 Grams
Onions (2 cups diced cooking onions) or 1 Cup Vidalia Onion if you like sweetness.
Celery (2 Cups diced)
Spices - Oregano, Basil & Rosemary
Sea Salt (Or Mrs Dash as a healthier substitute)


How Do I Make Billy Bob's Vegetable Chutney?

Here is how you make Billy Bob's Vegetable Chutney:

In a large Cooking Pot, add 2 cups water and Cherry Tomatoes. Cook on high heat to Boil them. Let boil for 10 minutes and the turn down to medium heat. Take a potato masher and mash the tomatoes like you were mashing Potatoes for Mashed Potatoes. Due this until you have a nice puree of Sherry Tomatoes, leave the skins in. Once this is done add all the other ingredients then the spices and let simmer until all vegetables are soft.. This takes aprox 1 - 1.5 hrs simmering at medium. Let cool then put into containers and place in fridge. Let stand in fridge for 4 hours so all the flavors can co-mingle together. With this recipy you can add your own favorite spic if you like it more spicy. This makes approximately 20 servings.
