Here is how you make Loaded Vegetable Fritata:

Finely chop vegetables (all except for potatoes) and add to skillet with 1 T olive oil. Add ham and sausage and saut? until vegetables are tender.Spray a lasagna size baking dish with non-stick spray and spread potatoes evenly over the bottom. Add cooked meat/vegetable mixture evenly over the top.Beat eggs and egg whites, add salt and pepper to taste. Pour over top of meat/vegetable mixture.
