1 c sliced mushroom
1 clove minced garlic

How Do I Make Vegetable Fritata?

Here is how you make Vegetable Fritata:

Chop all veggies except for spinach and sliced mushrooms. Heat oil in skillet. Sautee diced veggies and mushroom until they are getting soft. Add spinach, put a lid on the skillet and stir occasionally until spinach is wilted and veggies are well combined. Layer 3/4 cup of cheese over veggies. Beat eggs and pour over veggies, cook until sides start to set. Move to 400 degree oven for 10 mins until eggs are puffed and set. Top with 1/4 c cheese and let set up for 5 mins.
