Spray frying pan with cooking spray and heat to med low.Add vegetables and cook until soft.Put eggs in a bowel and gently stir.Do not make them frothy.Remove cooked vegetables.Sray pan with cooking spray again and heat to med low.Add eggs and swirl to coat frying pan.Cover with a lid and cook gently for about 2 mins.Add vegetables on one half of egg mixture.Sprinkle cheese on top of vegetable mixture.Cover with lid until cheese melts and eggs look set(1-2 mins).Lift lid and carefully flip the egg over the vegetable mixture and cheese.Put on a plate and cover with salsa.Number of Servings: 1Recipe submitted by SparkPeople user BRELOR.
