How Do I Make Vegetarian Omelet?

Here is how you make Vegetarian Omelet:

Place 1/2 the olive oil in an 8 inch pan. Saute the broccoli, pepper, shallot and garlic till the garlic is tender but not toasty. Set aside in a bowl and mix 1/2 the cottage cheese with these vegetables. Keep the mixture warm.Place the remainder of the oil in the pan and add the lightly whisked egg whites to the pan. Allow the egg to cook till almost set through. Lift the edges of the egg and allow uncooked portion to flow underneath for cooking.When the egg is mostly set, add the vegetable/cottage cheese mixture over 1/2 of the omelet, leaving enough room to fold the other half over the filling.Just before folding the omelet in the pan, sprinkle the Parmesan cheese and the Old Bay seasoning evenly over the filling.
