I made this up to use the veggies I had in the fridge. I'm sure you could sub in just about anything you want. For the strict paleo follower, skip the cheese. I'm not quite so strict. I personally think cheese is the origin of all happiness so I totally live it up. No, this recipe won't blow your mind, but it's yummy, easy, and has great paleo / primal numbers so I'm all over it.

Shallots, 5 tbsp chopped (can sub about 1/2 onion)
Asparagus, fresh, 8 medium spears cut into 1" pieces
Spinach, fresh, 1.5 cup, chopped
Swiss Cheese, 1 cup, shredded

Coconut Milk, 1.5 cup
Egg, fresh, 12 large
Salt & Pepper to taste, 1 serving

Here is how you make Paleo crustless bacon and veggie quiche:

Preheat oven to 350*Grease a 9"x13" baking dish with coconut oil. I suggest heating the pan ever so slightly and rubbing a block of cold oil all over it.Dice bacon then saute until crispy, set asideSaute shallots bacon grease until transparent. Add asparagus and saute for 2 minutes. Add spinach and stir frequently until spinach is wilted. Combine bacon and veggies and spread onto bottom of pan.Sprinkle cheese on top of mixture.Combine eggs and coconut milk in a bowl and whisk or beat lightly to mix well. Add salt and pepper.Pour egg mixture over stuff in the pan. Place pan in the over and cook for 35 minutes. Cut into 8 large slices. Mine were about 4" x 3" each and about 1" thick.
