Here is how you make Veggie Strata:

Grease 8x8 baking dish. Layer 4 pieces of wheat bread on bottom. Add a layer of potatoes on top of bread. Saute Onion and peppers on Med-High for a couple minutes, and add spinach until slightly wilted. Place sauteed veggies on top of potatoes in dish. Wisk Eggs with milk and add a little bit of salt and pepper. Add mixture on top of veggies in dish.Lastly, sprinkle shredded cheese evenly on top.(If possible, prep casserole and let set refrigerated over night)Cook 350 degrees for 45-50 minutes.
