1 cup chopped asparagus

4 tsp California Sun Dry oil packed sun-dried tomatoes
4 eggs
8 egg whites
1/2 cup feta cheese crumbles

Here is how you make Veggie and Feta Frittata:

Heat oven at 350.Heat olive oil in large skillet. Saute onions and asparagus. When soft, add mushrooms. When soft, add spinach and sun-dried tomatoes.In separate bowl, beat eggs and cheese. When spinach is welted, put veggie fold veggie mix into egg/cheese mix. Spray skillet generously with PAM. Put egg mixture back in skillet. Put on stove for 3 minutes. Then transfer to oven for 15 minutes. Remove from skillet immediately after cooking. Cut into four triangles and enjoy!
