This is one of my favorite guilt free breakfasts, you can substitute any combination of great veggies like peppers, or mushrooms, even broccoli. I love leeks and asaparagus (which both happen to be great for us trying to lose some poundage) so they are typically my go to's for this. Don't like potatoes? Sub a nice slice of multi-grain toast for the potatoes. I add a 1/2 cup of fresh fruit and a hot cup of coffee for the perfect post work out breakfast! Enjoy !

1 Egg, and 2 egg whites,
3 Asparagus spears (large) sliced on a bias
1/2 cup of diced/sliced Leeks
1/2 cup of roasted (or fresh) Baby Gourmet Potatoes (red, new & peruvian) (substitute regular baby reds if this variety isn't available)
2 Cherry Tomatoes (diced)
Grated Cheddar Cheese (in this case about 1/2 oz.)


How Do I Make Good Morning! Veggie Frittata?

Here is how you make Good Morning! Veggie Frittata:

Pretty simple ! Saute your veggiees (reserve the tomatoes, or else they will get mushy) in a small non stick omelette plan or any small non stick pan until tender. If I'm in a hurry, or need to save time, I add a few tbsp of water to the pan and cover, this steams the veggies faster and you can use higher heat. Preheat your broiler to high. Crack and scrambe your eggs, salt and pepper to taste. I sometimes add thyme or chives as well for additional flavors. In the pan, add a few tbsp of water - this should be bubbly under the veggies. Add your egg mixture, using a spatchula pull the egg mixture away from the sides, hence forming your frittata egg (similar to when you make an omelette). Add your cheese and tomatoes to the top and place unde the broiler - keep an eye on it ! After a few (2-5) minutes (depending on your own oven) - your frittata should be done, you will see the cheese melted, and slightly browned on the edges. Remove from oven and serve ! Note: This takes no time at all because it's a small pan, and a small amount of egg. If expanding the recipe to multiple services, be mindful that this will take longer.
