1/2 cup mushrooms
1/4 cup chopped fresh sweet red pepper
2 tablespoons of chopped onion

Here is how you make Sunday ham, veggie and swiss omelete:

In small omelete pan or small skillet, saute mushrooms, red pepper and onions in the Smart Balance spread until desired doneness. Add the ham and cook until warm. Spread mixture evenly over the bottom of the pan. Keep heat on medium.Whisk together the egg and egg white with a fork. Add egg mixture to the ham and veggies and let cook. Sprinkle swiss cheese on top.Let cook until egg is firmly set and then fold over one side to the other, making a folded omelete.
