How Do I Make Italian Veggie and Bacon Frittata?

Here is how you make Italian Veggie and Bacon Frittata:

Cook 3 slices of bacon, set aside when done. Heat oil in 10" frying pan and cook garlic and onion. Once onion starts to turn clear, add the zucchini and cook for two minutes. Add the spinich and cook until just wilted partially. Add egg mixture and make sure veggies are spread evenly throughout the frittata. Sprinkle the oregano and italian herbs on top of the frittata. Cook uncovered for 10 minutes on medium heat. Sprinkle the mozzarella cheese on top evenly and put into oven heated to 350 degrees. Cook for 8 minutes in oven, then for 2 minutes on broil, with your frying pan on a middle rack. Take out of oven to cool for about 3 minutes, then cut and serve. To make this a low fat option, substitute turkey bacon for the pork bacon, use vegetable oil spray instead of the coconut oil and 1 1/2 cups of egg whites + 1 egg (you need at least one real egg in the mix because it sets better while cooking). Also, make this a 4 serving dish and serve with a slice of whole grain dry toast.Serving Size: 1/3 of FrittataNumber of Servings: 3Recipe submitted by SparkPeople user WINGS6511.
