Preheat broiler to 450 deg. In a medium bowl, wisk eggs and egg substitute until well mixed. Set aside. Heat oil in oven safe skillet or pan over medium heat. Add onion, garlic, tomato, bacon and ham. Cook 3-5 minutes, sirring occasionally, or until veggies begin to soften. add the egg mixture to the pan and stir for 20-30 seconds, scraping the pan bottom. Turn heat to low and cook for 1-2 minutes or until edges begin to firm. Transfer pan to broiler and cook til top is firm. Remove from pan onto a plate and serve. Make 2 Servings.
