Here is how you make De-Constructed Veggie Omelet:

melt margarine blend in a large non-stick skillet. add all veggies and cook on medium heat. add seasonings when 3 minutes has passed, stirring well to blend. cook another 3 minutes. fill a mid-size pot with water and pour the white vinegar into the water. bring to full boil. crack each egg into a small bowl. stir the center of the boiling water until a well forms. carefully pour the egg into the well and let cook for 1 - 11/2 minutes until white is set but yolk is soft. place veggie blend into a deep bowl and remove egg from water with a slotted spoon and place on veggies. repeat the poaching with the other egg and add that to the bowl of veggies.Serving Size: makes 1 large servingNumber of Servings: 1Recipe submitted by SparkPeople user MARMAERT.
