How Do I Make Veggie Omelet for Two?

Here is how you make Veggie Omelet for Two:

Wash and chop the vegetables. Thoroughly rinse the bean sprouts. Set them aside.Vigorously beat the eggs and milk together with a hand wisk or a fork. Set aside also.Brush the olive oil thoroughly over a cast iron frying pan or griddle then heat to medium high. As the pan heats add the onions, celery and peppers, stirring them around and mixing them together (if you are adding ham put it in the pan with the vegetables). Spread them evenly over the surface once they are heated and reduce the heat, Pour the egg mixture over the vegetables and spread the bean sprouts over the top evenly. Sprinkle on the pepper. Cook until the egg is almost cooked through (if you are adding cheese sprinkle it on now). Fold the omelet in half (it is easier if you cut it into two portions first).
