seasoning for above. I like "beau monde" and white pepper
sweet potato (100grms) 2 c pre-cooked
1.5 cup broccolini
1/2 cup onion
5 slices of turkey bacon

Here is how you make Fratata veggie:

Prep and cook veggies, I used broccolini (or frozen broccoli;bell pepper) so do them until "dry" no water puddles. The (mushrooms and) onion were fresh so they were cooked together. Remove veggies to plate. Spray pan with Pam so you don't get a sticky Fratata. Whisk up the eggs with seasoning. Fresh or dry herbs; Mrs. Dash "what have you". Return veggies to pan pour over eggs mixture. Turn on broiler. (if cooking for serving then) Cook on stove top until set. Just a bit runny on top. Sprinkle with Rice Cheeze parma. Broil till set, watch. A bit of paprika helps the presentation. I serve with the Salsa or jarred pasta sauce.To do in bulk for freezing. Don't use wet veggies like zucchini. I do the above in multiples of the ingredients. If you like use an egg white to lesser whole for better nutrition. Put in a hot oven about 375 just until set.
