In a medium bowl, combine the dry ingredients. In another medium bowl, whisk egg substitute lightly and stir in milk, vanilla and melted country crock. Stir the liquid ingredients into the dry ingredients and mix until just blended. Do not overblend. Place the waffle plates in the top & bottom of the foreman grill. Set the lever to the back. Set the temperature to High to allow the grill to preheat. When the green light goes off, the grill is preheated. Coat the top & bottom plates with nonstick cooking spray. Spoon about 1/3 cup of batter onto each side of the bottom waffle plate and close the lid. Cook the waffles for 3 1/2 minutes. Check the waffles and continue cooking to a golden brown. Repeat with any remaining batter.
