Using any mixing method (I prefer handheld mixer for this) combine Applesauce, Canola Oil, Honey, the Eggs (the two whites and the whole), and the bananas.With a wooden spoon, mix in the overflowing cup of Oats, making sure all oats are soaked in the banana mixture. Set aside.In medium sized bowl, with a rubber spatula, combine the Baking Powder, Baking Soda, Cinnamon, Flax Meal, White Whole Wheat Flour, and Brown Sugar.With the rubber spatula used to combine the dry mixture, slowly incorporate the dry ingredients with the wet. Don't overmix, but make sure all of the flour is soaked and incorporated.** I always add in walnuts and sunflower seeds, this adds fat and calories but it gives the bread a wonderful crunch and it is all good fat so...
