Combine the graded carrots along with all other ingredients, EXCEPT for raisins and coconut oil, into a food processor and pulse until it begins to stick together. Pulse it a little more for good measure and possibly scrape down the sides if this makes you feel better. It made me feel better. Now add the raisins and pulse again. My batch was a tad dry, if yours is too, add that tiny bit of oil and pulse again. Roll into bite size balls, I measured mine out to 25 grams. Place in airtight container, refrigerate up to 5 days.
